Saturday, November 28 at 12 p.m. – Lidia's The Best of Italy
(Rochester, NY) – In her latest special, famed chef Lidia Bastianich whips up delicious appetizers, main courses and desserts inspired by visits to her native Italy. Lidia's The Best of Italy, airing Saturday, November 28 at 12 p.m. on WXXI-TV (DT21.1/cable1011/cable11), features three episodes from the current season of Lidia's Italy.
In the first act, Lidia goes clamming with one of the villagers, visits a fish market and learns about the production of extra virgin olive oil. The second act spotlights simple rice dishes, the merits of a quick risotto versus the more labor-intensive version and a visit to a rice farm to learn about the traditional and modern methods of harvesting rice. In the third and final segment, Lidia learns to make Fontina cheese at the Caseificio Vallet Pietro dairy and then receives cow-milking lessons from Matilda the cow lady. During the breaks, Lidia prepares different pestos, pairs different cheeses with fruit and wine, repurposes leftover bread for panzanella and croutons, and makes a chocolate bread parfait.
